As I was walking through the grocery store last week, I spotted cornish hens on sale. Ever since my previous adventure with the crock pot, in which I made slow cooked chili, I’ve been interested in finding something new to cook in it.
Now, I’ve never previously bought or prepared cornish hens, but I love preparing chicken breasts. And for some reason, a light just went off in my head, and I purchased a couple. My mind raced through all of the ingredients I had around the apartment, and I began to construct a plan of culinary excellence!
Ingredients:
2 Cornish hens
14 ounces organic chicken broth
8 cloves garlic, minced
1/2 sweet onion, chopped
1/2 organic lemon, squeezed and tossed in
zest from that organic lemon
freshly-ground black pepper to preference
several shakes of oregano
2 teaspoons poultry seasoning
Little furry helper is optional.
Preparation:
Pour chicken broth into crockpot, and carefully set hens into the broth. Throw in all of the other ingredients with the garlic, lemon juice, zest, pepper, and seasoning right on the hens. Crock 6 to 8 hours on low.
For sides, I had steamed broccoli with hummus, and quinoa.
Easily feeds 2 with possible leftover or second helping!
